Tomatoes and Peppers
This September, Atlas Farms delivers a stunning array of produce to our restaurants, highlighting the best of the late summer harvest. Even as the season shifts, our tomatoes shine with their vibrant colors and rich flavors, perfect for fresh salads and summer-inspired dishes. Their juicy sweetness brings a refreshing touch to any plate. In addition to tomatoes, our peppers are thriving this month. From shishito and bell to Italian frying and chili peppers, they offer mild and bold flavors. These versatile peppers enhance everything from simple grilled sides to complex sauces and garnishes.
Root Vegetables
As the nights get cooler and the days grow shorter, our farm is starting to produce the first fall root vegetables. We’re seeing an abundance of carrots, beets, and sweet potatoes which add rich, earthy sweetness and robust flavors to our dishes. These carrots and beets not only enhance our roasted meals but also serve as a flavorful base for our autumn soups and salads. The sweet potatoes are of the white haymon variety and have a sweet yet smooth flavor perfect for Fall. Their excellent storage capabilities and the way their flavor intensifies after being harvested make them perfect for this seasonal transition, keeping our menu fresh and in tune with the season.
Lettuce and Spinach
To balance the rich flavors of our root vegetables, we’re also harvesting tender greens like spinach and lettuce. These cool-weather greens are thriving and bring a crisp, fresh lightness to our dishes, perfectly offsetting the heartier vegetables. Whether used in a refreshing salad or as a side to our seasonal main courses, they offer a bright contrast to the deeper autumn flavors. As fall unfolds, this mix of late summer and early autumn produce helps us craft menus that highlight the best of Maryland’s seasonal harvest.
