As the Founder of Atlas Restaurant Group, I have the unique privilege of sampling every dish on the menus across our diverse range of properties.

Whether it’s a classic staple or a seasonal special, I’ve had the pleasure of experiencing the creativity and craftsmanship that goes into each and every dish.

Over the years, there are certain items that have captured my heart and taste buds, dishes that I find myself gravitating towards time and time again.

Here’s a list of some of my personal favorites, in the order that these restaurants opened or joined the Atlas portfolio:


Harbor East Delicatessen & Pizzeria

The Harbor Beast is a hearty and flavorful sandwich that captures the essence of a classic deli experience. With tender roast beef complemented by the sharp kick of horseradish and melted cheese, it’s a sandwich that satisfies every time, which is why it has been a staple on the menu since the deli first opened its doors in 2010.

Ouzo Bay

At Ouzo Bay, I love to experience a little bit of everything, and my go-to combination perfectly represents the restaurant’s Greek-inspired coastal cuisine. The Australian Lamb Chops are juicy and tender, always grilled to perfection. Pairing it with the Dover Sole—a delicate, buttery fish that’s flown in fresh from Holland daily—creates a custom surf and turf experience. The freshness and quality of the ingredients make these dishes stand out.

Azumi (Baltimore)

Azumi’s focus on precision and flavor is evident in every dish, but the Crispy Rice Tuna and Pork Gyoza are standouts for me. The Crispy Rice Tuna offers a delightful contrast between the crunchy rice base and the smooth, rich tuna on top, all enhanced by a hint of spice. The Pork Gyoza is a classic done right—crispy on the outside and juicy inside. But the star of the show is the Robata grill, where the high heat of the 1800º binchotan charcoal imparts an intense smoky flavor to everything from tender chicken to succulent lamb chops.

Loch Bar (Baltimore)

Loch Bar’s Maryland Crab Cakes are a tribute to Baltimore’s culinary heritage, packed with sweet, lump crab meat and just enough seasoning to let the seafood shine. I often pair these with a selection of fresh shellfish—whether it’s oysters, shrimp, or clams. And of course, a Grapefruit Crush is the perfect refreshing beverage to enjoy alongside these dishes.

The Elk Room

The Elk Room is an ideal spot for unwinding with a sophisticated beverage. The Yamazaki 18, a Japanese whiskey known for its deep complexity and rich flavors of dark chocolate, dried fruit, and a hint of smokiness, is my drink of choice. Served over a single, perfectly clear ice sphere, it’s a personal moment of pure indulgence.

Tagliata

At Tagliata, the culinary team takes pride in their pasta dishes, and the daily specials never disappoint. I always make it a point to try what the chef has prepared, as the fresh ingredients and inventive flavors make each dish a hit. On the regular menu, the Chicken Marsala is a personal favorite. The tender chicken, served with a rich, velvety Marsala wine sauce and earthy mushrooms, pairs beautifully with a robust Tuscan red wine.

Bygone

At Bygone, I always start with the Maryland Crab Dip, a creamy, cheesy dip that’s bursting with crab flavor and perfect for scooping up with mini soft pretzels. For my main course, the Signature Prime Rib is a must—succulent, juicy, and cooked to perfection. If I’m in the mood for something lighter, the Crab Louie Salad is a refreshing choice, with its crisp greens, sweet crab meat, and tangy dressing. Paired with a dirty Chopin Martini, it’s a meal that epitomizes classic elegance.

Italian Disco

Italian Disco brings a fun and lively vibe to the traditional Italian-American pizza parlor, and I always go for their 18-inch New York style pizza. The crust is perfectly thin and crispy, just the way I like it. To start, the Shrimp Spiedini, skewered shrimp with a spicy kick from Calabrian chili, is a perfect appetizer that sets the stage for the pizza to come.

Loch Bar (Boca Raton)

Loch Bar Boca offers a unique blend of coastal and Southern flavors. The Conch Ceviche is light, refreshing, and full of zesty citrus flavors. Following that, I love to indulge in the Eastern Shore Fried Chicken—a dish that brings together the comfort of Southern cooking with a Maryland twist. The chicken is crispy on the outside and tender on the inside.

Ouzo Beach

There’s something special about dining al fresco at Ouzo Beach, and the Chicken Souvlaki is my go-to order. The skewers of marinated chicken, grilled pineapple, red peppers, and onions are not only delicious but also perfectly suited to the waterfront setting. The accompanying curry sauce adds a burst of flavor that ties the dish together beautifully.

Loch Bar (Houston)

Loch Bar Houston brings a bit of Cajun flair to the menu with the Chicken & Sausage Gumbo. This hearty, flavorful stew is packed with smoky sausage, tender chicken, and a deep, rich roux that’s truly comforting. To complement this, I often order the Bone-in Filet Chops—a cut that’s cooked to perfection, juicy, and full of flavor.

The Choptank (Baltimore)

The Choptank in Fells Point offers a quintessential Maryland experience with its Steamed Crabs. There’s nothing better than sitting on the patio with a dozen crabs and an ice-cold Coors Light, savoring the sweet, succulent crab meat with each bite. It’s a perfect way to relax and enjoy the local flavor.

Maximón

Maximón is all about bold, Latin-inspired flavors, and the Chicken Chicharrones are a must-try. These crispy, savory bites are incredibly unique and make for a great start to any meal. Following that, I like to mix and match a few tacos, depending on my mood. Whether it’s the savory carne asada or the spicy shrimp, each taco is bursting with flavor and authenticity.

Monarque

Monarque offers a dining experience steeped in French tradition, and I often start with the Lyonnaise Salad—a classic combination of frisée, lardons, and a perfectly poached egg, all dressed in a tangy vinaigrette. The Chicken Paillard, a tender, thinly pounded chicken breast served with a luscious beurre blanc sauce, is a dish that I find myself ordering repeatedly. To accompany my meal, I usually choose a dirty Chopin Martini or let the sommelier recommend a French wine that complements the flavors on my plate.

The Admiral’s Cup

At The Admiral’s Cup, the Crab Egg Rolls are a creative take on a Maryland staple. These crispy and crunchy rolls are filled with sweet crab meat and served with a spicy aioli that adds just the right amount of heat. It’s a fun and flavorful dish that’s perfect to enjoy while listening to local musicians.

Watershed

Watershed is the place to be before and after Ravens home games, and nothing hits the spot like their Cheesesteak. The sandwich is loaded with tender, thinly sliced steak, melted American and provolone cheeses, and sautéed onions, all packed into a soft roll. Paired with a few cold Miller Lites, it’s a meal that’s perfect for game day.

Atlas Fish Market

Atlas Fish Market is my go-to spot for picking up fresh seafood to cook at home, but I can never resist enjoying a dozen Oysters while I’m there. Always shucked to perfection, it’s a simple treat that I always look forward to.

Perennial

Perennial offers a creative and flavorful menu, and the Fried Lobster Tail appetizer is a standout. The lobster is coated in a light, crispy batter and served with honey butter and lemon lavender salt, creating a dish that’s rich and full of flavor. The Utz-Crusted Sea Bass is another favorite—the crunchy potato chip coating adds a delightful texture to the tender, flaky fish.

Cunningham’s Cafe

Cunningham’s Cafe is my go-to spot for a quick lunch in the county and the Towson Chicken Sandwich never disappoints. The sandwich features a fried, pickle-brined chicken breast, smothered in honey cayenne hot sauce. It’s a perfect balance of sweet, spicy, and savory. To finish off my meal, I always opt for a double espresso to give me that extra boost.

Waterfront Hotel

The Waterfront Hotel offers a laid-back, casual dining experience, and I always go for the Black Angus Burger with tater tots. The burger is juicy and flavorful and depending on my hunger level, I’ll customize it with a single, double, or even triple patty. The crispy, golden tater tots are the perfect side, adding a nostalgic touch to the meal.

The Valley Inn

The Valley Inn is where I go for a comforting, classic meal. I usually start with a cup of the Maryland Crab Soup, which is packed with crab meat and vegetables. The Mediterranean Skewers, featuring grilled meats and vegetables, are another great option. For my main course, I often choose the Turkey Club—a hearty sandwich with roasted turkey breast, bacon, lettuce, and tomato, all served on toasted brioche bread. It’s simple, satisfying, and always hits the spot.

The Oregon Grille

The Oregon Grille is all about indulgence, and I always start with the Potato Skins and Caviar appetizer. The combination of crispy potato skins and delicate caviar is a perfect blend of comfort and elegance. For my main course, I go for the 18oz Dry-Aged Prime Cowboy Ribeye—a perfectly cooked steak that’s full of rich, beefy flavor. Paired with a robust California red wine, it’s a meal that’s truly unforgettable.

Marmo

In Houston, Marmo offers an Italian dining experience with a Texas twist, and their Wild Boar Lasagna is a dish I can’t resist. The local Texas wild boar is slow-cooked in a rich ragu, layered with pasta and Parmigiano, creating a lasagna that’s hearty, flavorful, and deeply satisfying. It’s a unique take on a classic dish that showcases the best of both Italian and Texan culinary traditions.

The Choptank (Annapolis)

As a Maryland native, soft shell crab season is something I look forward to every year, and The Choptank Annapolis does it right. Their version features a crispy, tender Soft Shell Crab stacked between slices of fried green tomatoes, creating a dish that’s full of contrasting textures and flavors. It’s a true taste of Maryland that I can’t get enough of.

James Joyce Irish Pub & Restaurant

James Joyce brings a bit of Ireland to Baltimore, and their classic Fish and Chips is a must-try. The cod is perfectly battered and fried to a golden crisp, while the inside remains flaky and tender. Served with fries and a side of tartar sauce, it’s a comforting and satisfying meal that reminds me of a traditional Irish pub experience.

Loch Bar (Philadelphia)

While in Philadelphia, I usually stick with my Loch Bar tried-and-true favorite—the Maryland Crab Cakes. Made with fresh, sweet crab meat and just enough filler to hold them together, these cakes are a taste of home. Sometimes, I like to mix it up by ordering the Maryland Crab Cake Sandwich instead, which offers the same delicious flavors in a handheld format.

The Ruxton

At The Ruxton I always start with the Chargrilled Oysters. These oysters are cooked to perfection, with a smoky char and a rich garlic herb butter that’s irresistible. For my main course, I go for the Chicken Fried Maine Lobster Tails—a dish that combines the best of Southern and New England cooking. The lobster tails are crispy on the outside, tender on the inside, and served with a sweet and spicy Nashville honey butter. Paired with a bottle of Paso Robles Adelaida Cabernet Sauvignon, it’s a meal that’s truly indulgent.

Order of the Ace

Order of the Ace is a perfect spot for enjoying live jazz while sipping on expertly crafted cocktails. I usually leave the decision to the talented mixologists, who never fail to surprise me with their inventive whiskey cocktails. Whether it’s a classic Old Fashioned or a creative signature concoction, the drinks here are always a highlight of my visit.

Azumi (Houston)

Azumi Houston brings Japanese flavors to the heart of Texas, and their Yakisoba Noodles with Short Rib is a dish that’s quickly become a favorite of mine. The tender short rib combines perfectly with the stir-fried noodles, which are tossed in a savory sauce. I always ask the team to recommend a nice sake to complement the dish, rounding out a meal that’s full of bold, delicious flavors.
